Food Fight Friday - Cupcakes for Cancer

What the Shmuck...
How did Friday roll around so quickly?!

In fairness it has been a busy week around here.
So before we start slingin' food at each other
I have a quick update..

Yes...Sorry to bring up that ol' C word again,
But like I said before,
You just never know when Cancer hijacks your life...
and your Blog!

Though today is a Happy Happy Update.
We're all smiles here as I just passed my 1 yr checkup!
Can I get a Whooop Whoooop!

What better celebration food to make than..


This is my absolute go-to recipe,
It never fails and makes super moist yummy cupcakes.
They are also Vegan....if you skip the icing part!
For the chooch's 2nd birthday,
That was a big deal for a 5yr old guest who had dairy allergies,
It was the first time she could actually eat the birthday cake
with everyone else!
And, No raw eggs means....
kids really CAN lick the spoons and bowl!

So here's the recipe, and then I'm running for cover...

Sling it Lovelies!

Wacky Chocolate Cupcakes!

1 1/2 Cups Flour
1 Cup Sugar
3-4 Tbsp Cocoa
1 tsp Baking Powder
1 tsp Baking soda
1/2 tsp Salt

Mix all dry ingredients together
Then add:

1 1/2 tsp Vanilla
1 Tbsp Vinegar (white distilled)
5 Tbsp Veg. Oil
1 Cup Water (lukewarm)

Line muffin pan with cupcake liners, fill 3/4 full
Makes 12 standard size / 24 mini
Bake at 325 F for 35 - 40 min.

Alternately you can also bake this in an 8"x 8" square pan
(bake 45 - 50 min)

Buttercream Icing

3/4 Cup Butter (room temp)
2 1/4 Cups Icing sugar
3 Tbsp Boiling water
1/2 tsp Vanilla

Beat butter to soften,
add all other ingredients and Beat until smooth.

scarf down 2 before slinging...
errrr I mean...
No I didn't!

The Sunday Art Review - #2

Today's pick has me sticking a toe out of the closet

Sometime a bit of black sneak's in there...

Especially when we're working in Charcoal!
Man I love that stuff!
I've never been a fan of pencil
or drawing....
But Charcoal...
Black...Messy...Glorious Stuff!

Unfortunately, I've had no time to bake today
so instead I'm slinging a challenge out to you all...

Notice it's still in the box!
You wouldn't believe how difficult it is to find a Slow cooker
(Crock pot) on this island.

It took me weeks and this was the only instock.
I could get super turbo cookers,
Fast oil-less Fryers,
grill in seconds gadgets...
But try to find anything that will give you a nice slow cooked family meal..

Needless to say I'm not even going to try to look for recipe books here!
So if you have a good crock pot recipe...
I'd love it if you could sling it my way!

Everything else goes too...

The Sunday Art Review

Did I hear somebody say I was slackin?!
Seriously...It's been crazy productive around here!

I thought I would finally let you in on a little
on the side fun I've been having lately!

A few months ago I had an email from a friend wondering if anyone was interested in taking art lessons with this great local artist she knew.

Holiday Overload!

Oi Vay....
Are the Holidays over yet?!!!

I'm afraid we've been a bit buried in Fiestas here.
It starts with Christmas eve, then Christmas Day,
then New Years and Finally 3 Kings.
I honestly cannot eat another bite!
So I apologize that Food Fight Friday
will need to be postponed until next week!

Besides being sick of food....
I'm buried in an avalanche of post that was delayed...
But ohhhh...a bit of delayed Christmas is never bad...
Especially when it contains 5 packages of New yummy Fabric!

So rather than tying the apron on and
baking up something yummy to sling at you.
I'll be tying myself to the washing machine and iron.

Oh ya....And the Hoover!

I'll be confessing later to an Epic Christmas Fail,
And it definitely includes the above pictured bit of ......
