Food Fight Friday - Oatmeal for Breakfast

Raisins.....Oatmeal...
Sounds like a good breakfast to me!

Okay Okay
Adding White chocolate chips
may bump it out of the breakfast category
But WHATEVER!

Today I'm slinging some yummy
Jumbo Oatmeal Cookies your way.

One of the Chooch's teachers is leaving
so we thought we'd make a delicious parting gift.
So much more fun than apples.



Jumbo Oatmeal Cookies

1/2 Cup Butter
3/4 Cup packed Brown Sugar
1 Egg
1/2 tsp Vanilla
3/4 Cup Flour
1 1/4 Cup Oats
1 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Raisins
3/4 Cup Chocolate Chips (semi-sweet or white)

Preheat oven to 350F (180C)
Cream Butter and Brown sugar until fluffy,
Beat in Egg and Vanilla
Add Flour, Oats, Baking Soda and Salt, mix until well blended.
Stir in Raisins and Choc. Chips

Drop dough by 1/4 cup mounds onto ungreased baking sheet,
about 3 inches apart. (approx 6 to a pan)
Flatten each cookie into a 2 1/2 inch circle.
Bake for 10-15min. or until lightly browned.

Then eat with a tall glass of cold milk
and call it Breakfast!

Food Fight Friday - Dukkah dunk

Happy Friday Lovelies!

I suggest you add some swimmers goggles
to your protective wear today!

Today I'm slingin some Dukkah at you,
And I promise you...
it really stings if you catch it in the eye!




Egyptian Dukkah

1/2 Cup Roasted nuts (pistachio, hazelnuts, or other)
1/3 cup toasted sesame seeds
1 Tbsp dried Thyme
1 Tbsp cumin seeds
2 Tbsp coriander seeds
salt & pepper (salt not necessary if using salted pistachios)

Toast the nuts in a hot oven for approx 15 min. stirring frequently to avoid burning.

Toast the spice seeds in the same way for approx 5-10 min

Toast Sesame seeds same way, for approx 5 min

Cool and combine in food processor 3-4 min, or use a mortar & Pestle

You want a dry crumb mixture.
*If you over process, oils released from the nuts can make it slightly pasty.
That's not what you want!
Store in airtight container.

Now just grab some crusty bread and good olive oil,
grab a seat in the garden and dip dip Dukkah

(can also be used as a rub on meats, in salads....you name it)

Food Fight Friday - Puff Puff Gooooooo

Happy Friday Lovelies.

Today I planned to meet a dear friend for Tea
after our School Runs.
Yesterday I forgot to Bake!

This Morning I needed a 5 minute wonder!

Enter the Magic of Puff Pastry.



I used a frozen Puff Pastry which I had placed
in the fridge overnight to thaw.
Woke up...Turned on oven
got me and the kidlet dressed.
Took pastry out of the fridge to soften for 15 minutes.
Made Kidlets breakfast...
Cored and sliced Apples thinly
Added lemon juice, brown sugar and pinch of salt.
Let that rest whilst making kidlets school snack.
Rolled out the now rested pastry and cut to desired size,
stacked on apples and into the oven it went.
20 minutes later....

Kidlet and I were fed, dressed and prepared to hit the road
With a delightfully warm and Yummy Apple tart!
