Food Fight Friday - Cupcakes for Cancer

What the Shmuck...
How did Friday roll around so quickly?!

In fairness it has been a busy week around here.
So before we start slingin' food at each other
I have a quick update..

Yes...Sorry to bring up that ol' C word again,
But like I said before,
You just never know when Cancer hijacks your life...
and your Blog!

Though today is a Happy Happy Update.
We're all smiles here as I just passed my 1 yr checkup!
Can I get a Whooop Whoooop!

What better celebration food to make than..

Cupcakes!




This is my absolute go-to recipe,
It never fails and makes super moist yummy cupcakes.
They are also Vegan....if you skip the icing part!
For the chooch's 2nd birthday,
That was a big deal for a 5yr old guest who had dairy allergies,
It was the first time she could actually eat the birthday cake
with everyone else!
And, No raw eggs means....
kids really CAN lick the spoons and bowl!

So here's the recipe, and then I'm running for cover...

Sling it Lovelies!

Wacky Chocolate Cupcakes!

1 1/2 Cups Flour
1 Cup Sugar
3-4 Tbsp Cocoa
1 tsp Baking Powder
1 tsp Baking soda
1/2 tsp Salt

Mix all dry ingredients together
Then add:

1 1/2 tsp Vanilla
1 Tbsp Vinegar (white distilled)
5 Tbsp Veg. Oil
1 Cup Water (lukewarm)

Line muffin pan with cupcake liners, fill 3/4 full
Makes 12 standard size / 24 mini
Bake at 325 F for 35 - 40 min.

Alternately you can also bake this in an 8"x 8" square pan
(bake 45 - 50 min)

Buttercream Icing

3/4 Cup Butter (room temp)
2 1/4 Cups Icing sugar
3 Tbsp Boiling water
1/2 tsp Vanilla

Beat butter to soften,
add all other ingredients and Beat until smooth.

scarf down 2 before slinging...
errrr I mean...
No I didn't!

I remember wacky cake from when I was a kid :) I love that you can make cupcakes from the batter - I never thought about doing that!! And what a great egg free and dairy recipe :)

Congratulations, that is absolutely spectacular news. Your cupcakes aren't half bad either! ;) My daughter is dairy intolerant so birthdays are always a little touch and go, it was sweet of you to think of that child considering most don't.
