Food Fight Friday - Oatmeal for Breakfast

Raisins.....Oatmeal...
Sounds like a good breakfast to me!

Okay Okay
Adding White chocolate chips
may bump it out of the breakfast category
But WHATEVER!

Today I'm slinging some yummy
Jumbo Oatmeal Cookies your way.

One of the Chooch's teachers is leaving
so we thought we'd make a delicious parting gift.
So much more fun than apples.



Jumbo Oatmeal Cookies

1/2 Cup Butter
3/4 Cup packed Brown Sugar
1 Egg
1/2 tsp Vanilla
3/4 Cup Flour
1 1/4 Cup Oats
1 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Raisins
3/4 Cup Chocolate Chips (semi-sweet or white)

Preheat oven to 350F (180C)
Cream Butter and Brown sugar until fluffy,
Beat in Egg and Vanilla
Add Flour, Oats, Baking Soda and Salt, mix until well blended.
Stir in Raisins and Choc. Chips

Drop dough by 1/4 cup mounds onto ungreased baking sheet,
about 3 inches apart. (approx 6 to a pan)
Flatten each cookie into a 2 1/2 inch circle.
Bake for 10-15min. or until lightly browned.

Then eat with a tall glass of cold milk
and call it Breakfast!

Oh yum! Oatmeal always tastes best with chocolate chips.

I adore cookies and a big glass of whole milk for breakfast and actually I make home made muffins with chocolate chips for my girls to take for breakfast every day, so we are on the same page!
